Comforting Chicken Noodle Soup with Homemade Noodles (Recipe)



What is more comforting and healing than a steaming bowl of Chicken Noodle Soup on a cold spring day? This soup is hearty, nutrient-dense, and chock-full of flavor! Homemade noodles are delicious and simple to make, and you have full control of all the ingredients.

Homemade Noodles Ingredients:

  • 2 cups of flour
  • 1/2 tsp. salt
  • 5 eggs divided, 4 whole eggs plus one yolk

Noodle Instructions:

  1. Stir the flour and salt together in a bowl.
  2. Whisk eggs together in a separate bowl until scrambled.
  3. Then stir into flour mixture until it creates a rough dough.
  4. Turn the dough out onto a floured surface and knead into a smooth ball.
  5. Divide the dough into four equal parts.
  6. Roll one part out on a floured surface.
  7. Be sure to flour very thoroughly to keep the dough from sticking to the rolling pin and countertop.
  8. When the dough is very thin and nearly translucent fold in thirds and cut into 1/2-inch strips with a pizza cutter.
  9. Place each noodle strip in a little pile on a baking sheet with parchment paper. Do not pile noodles on each other or they may stick together.
  10. Repeat with remaining dough.
  11. Now begin making the soup and you will add the noodles towards the end of the soup instructions.

Soup Ingredients:

  • 2 pints chicken bone broth
  • 1 cup water
  • 1/2 cup celery, chopped
  • 1/2 cup carrots, diced
  • 4-5 fresh mushrooms, sliced
  • 1/2 cup onion, diced
  • 2 garlic cloves, minced
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 tsp. dried parsley, optional
  • 1 1/2- 2 cups chicken, cooked and diced

Soup Instructions:

  1. Pour the chicken broth and water into a medium-sized kettle.
  2. Turn heat on high till it begins to boil.
  3. While liquid is heating, chop the veggies.
  4. Add the celery and carrots to the kettle.
  5. Heat a small frying pan and melt a tbsp. of butter in it.
  6. Sauté the onions and mushrooms together a few minutes till onions are translucent.
  7. Add in the garlic to the frying pan and sauté 1 minute.
  8. Add to the soup kettle.
  9. Add seasonings.
  10. Simmer till all veggies are tender.
  11. Next add the noodles, one strip at a time stirring continuously. (If there are too many noodles for your liking, you can boil them in a separate pot of water till tender. Drain the water off and freeze for another time.)
  12. When the noodles are tender, add the chicken.
  13. Bring back to a boil and cook for 3 minutes before removing from the heat.
